Cranberry, raisins, mint - base of our aromatic and sweet chicken...So let's start cooking THIS chicken!
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 glasses of apple juice
- 2 apples
- 3 tablespoons dried cranberry
- 3 tablespoons raisin
- 3-4 cloves of garlic
- bunch of green parsnip
- fresh mint
- salt
- pepper
- 2 tablespoons bread crumbs
- olive oil
Directions:
- Preheat oven to 180 degrees C. Using a sharp knife, cut a deep cut along each chicken breast to make a pocket. Season on both sides with salt and pepper and garlic.
- Meanwhile cut apples up into small pieces. In the bowl mix : apples, with cranberry, raisins, bread crumbs, the mint and green parsnip, add salt and pepper to taste.
- Fill pockets with mixture and use toothpicks to close small pockets.
- In a large skillet, heat oil over medium. Add chicken, and cook until browned on the outside and opaque throughout, 8 to 10 minutes per side.
- Add olive oil and rest of mixture to a baking sheet, then transfer chicken to a baking sheet, browned side down and pour all the apple juice.
- Put baking sheet with chicken to the oven and bake about 45 minutes in 180 degrees C.
- Remove toothpicks. Serve hot.
